Ramen arrived in Japan as a Chinese noodle dish and then went its own way entirely. The noodles are wheat flour mixed with kansui, an alkaline water that gives them their yellow colour and springy bite. The broth is simmered for hours from pork or chicken bone, and many shops layer in the umami of kelp and dried bonito on top of it.
Four seasonings dominate — shio (salt), shoyu (soy sauce), miso and tonkotsu (pork bone) — and each region raised its own speciality, such as Sapporo miso or Hakata tonkotsu. In 1958 Ando Momofuku invented instant ramen, and the just-add-hot-water convenience changed how the whole world eats: more than a hundred billion servings are now eaten each year. Japan itself is said to have around thirty thousand ramen shops.
